Hendo’s & Red Wine Chicken

I came back home from work one Thursday evening tired, a bit disappointed… and hungry! Basically it was not a good day at work. If I do have a day like this, I cook. It’s my escape. Ellie was spending the evening at yoga, so I had time to prepare a nice meal for us.

This meal feels special but it’s very easy to make, not a lot of ingredients and it tastes amazing. Seriously.

It’s up to you which chicken parts you choose, grab some potatoes, garlic, wine, olive oil, Hendersons relish or light soy sauce. Plus a few herbs and seasoning to taste!

Put all the ingredients in the oven bag, add Hendersons relish or soy sauce and red wine, but if you don’t have that just use olive oil. Shake that bag like a polaroid picture! Oven 175C for 70min. Pop it in the oven and let’s move on!

This is the side dish – carrot salad. The only ingredients are mayonnaise, 4 carrots, 1 garlic glove and parsley.

Grate the carrots, add them to the bowl with the chopped garlic and mix with mayo. Add parsley on top and it’s done. Sooo tasty and simple!

Tell me that doesn’t look delicious. Very easy to make, takes around 90 mins, but it’s a real crowd pleaser. We repeated this meal when cooking for Ellie’s family and it was a resounding success!

Wine: red is best for this dish, as it really complements the chicken and flavouring. We had Italian Sagrato Chianti, which was both great in the meal and to serve.
