Rainy Banana Bread

Rainy day. Most importantly Monday. On a rare occasion you have a nice day. But not this Monday. Ellie is 22 and she just had chicken pox. For the past year I have been nick-naming her with food names. One of them was banana bread. So just to make her chicken pox a bit more bearable, I have suggested to make this delicious creation.

Like with any other baking goods, all you will need is patience. Baking is the longest bit, due to the banana texture and moisture. Bananas, butter, sugar, self-rising flour, baking soda, vanilla extract, 2 eggs. And no mixer is required – unless you like washing up. In our recipe we add a little bit of chopped hazelnuts which are optional – but strongly recommended! 🤔

Grab a bowl! Or tiny cute ones, that I have purchased today. Mix sugar with butter (room temperature butter please). Add 2 eggs in to the mixture, one after another. Vanilla extract and hazelnuts, following a lovely creamy texture. It is now the turn for those bananas. Try to use the ones that are turning brown’ish as they will be the softest ones. Mash them up in a bowl and add with the rest of ingredients.

After you have done that add self-rising flour and baking soda and mix mix mix. After the flour is not visible anymore, you will get a thick mixture, which you will be able to spread all over the baking tin. 🤗

Use any baking paper you like and evenly spread the mixture. Some people don’t even use baking paper, but the it would be hard to take it out and the sides might burn! I hope you have pre-heated your oven. If not it is 170 Celsius for about 45min and then 100 Celsius for another 10min. 😥

What do you think? Let it cool for about 30min and dig in! I usually suggest making a cup of coffee with it, but this time due to chicken pox situation we had hot coco. I will show you how to make your own hot coco next time. Hope you enjoyed it!

  • Self rising flour – 240g
  • Caster Sugar – 190g
  • Unsalted butter – 110g
  • Baking soda – 1tsp
  • Vanilla extract – 1tsp
  • 3 Bananas
  • Chopped Hazelnuts – 40g
  • 2 Eggs
  • Baking paper and a Tin
